We ate shrimp tacos,
me trying to recreate the restaurant recipe.
Soft tortillas, black beans, white rice, sautéed shrimp, fresh pineapple salsa.
To the salsa, we add a drizzle of honey and a touch of cinnamon.
We ate rice bowls
from Hope’s Table, new favorite cookbook.
The colors fed me like the food did
but it was the marinated lime-and-soy chicken
that sent us back for seconds.

Oops! I accidentally deleted my comment. We had spaghetti and meatballs. Hope’s Table is my favorite cookbook to right next to Mennonite Community Cookbook.

This past week I only cringe when I remember my cooking or lack thereof.
Simply put: “Hot dogs are my super power” (especially on days when there’s high pressure on every side)
I am RIGHT. WITH. YOU. this week. Cook? Who has time for that in the last week of school?!????♀️ I did manage to make chicken fried rice and corn on the cob last night. Only because we postponed a meeting…again…
Yes well, you notice I said we ate, past tense, not we are eating, present tense. I am thinking big picture here. It might be well not to inquire too closely about our meals this week.
Only slightly offended that I didn’t receive a dinner invitation, but I’ll get over it. ☺️ Looks so delicious! Hope’s Table is my favorite cookbook right now, so many good recipes. We’ve been enjoying lots of grilled meats this week.
I made fish tacos recently; not as fancy as shrimp tacos with fresh pineapple salsa, but still!- super duper yum.
Shrimp tacos I’ll need to try. When I went out with a friend recently, I ordered a lunch entree that featured shrimp to make the most of a rare occasion in which I didn’t need to carefully divide the shrimp into legalistically equal amounts with my family. ????
