Beef and Black Bean Biscuits

1# ground beef

½ onion, chopped

1 clove garlic, peeled and minced

Sauté together until brown. Add:

1 can black beans

1 pkg taco seasoning

½ cup water

Cook and stir till bubbly and heated through.

Serve over biscuits. Top with shredded cheddar and sour cream.

I was searching for a use for taco meat besides the usual “wrapped in tortillas” or “layered with chips and veggies as a haystack.” Served up next to cole slaw and corn fritters with honey, this couldn’t go far wrong. What can I say? I’m a Yankee who loves grits.

I really liked the combo, but it was just a bit dry. The juicy meat did not quite offset the crumbling biscuits. What should I have added?

  1. I think corn bread would be a good alternative to the biscuits.
    Or drizzle your favorite home made salad dressing over the whole deal.
    We like to eat taco toppings with our baked potatoes.

  2. Add a can of corn and a can of stewed tomatoes or enchilada sauce and you have a tasty soup to go with the biscuits.

  3. Add a cup or so of salsa(until it looks right). 🙂 Put it in your favorite cast iron frying pan. Add a layer of unbaked biscuits (I like drop biscuits for this.) Bake until biscuits are done. Serve with sour cream and grated cheese. Also salsa or a variety of salad dressings would be good too.
