Confession: One good thing about having kids underfoot is that I canβt sit around eating all the time, like I wanted to those first weeks of pregnancy. This is a good thing.
But there is one snack I can alwaysΒ find time for, a perfect little creation of my friend Shaunda (whom I mention too often on this blog but I canβt help myself)β¦
Take a saltine crackerβ¦
Top it with a slice of pepperoniβ¦
Add a daub of cottage cheeseβ¦
And top it off with a sprinkle of black pepper.
I can tell more than half of you are gagging by now. Honestly, it must be something about pregnancy hormones. Shaunda convinced me to try it one time when I wasnβt expecting, and it wasβ¦ fine. You know. A cracker and cottage cheeseβokay, little weird, but no problem.
I tried it the other day, pregnant, and it was (briefly) the culmination of everything Iβve ever wanted in myΒ life. That good. I might be eating it every day from now on.
How many of you are brave enough to try it now, hmmmmm?

Sounds yummy to me! I love peppered cottage cheese all on its own, so I can only imagine the delight when it’s paired with the zing of pepperoni and the crunch of a cracker.
I’ve never heard of adding the pepperoni, but cottage cheese on a saltine with salt and pepper is THE way to eat cottage cheese!!!! Ummmmm…… I can taste it now…….. I’ve had fun introducing people to this treat too. I’ve had many skeptics turned believers! π
One question, how do you get the pepperoni eaten in bite-size increments…or maybe no one’s ever taken a bite into pepperoni and the rest of it wants to come too. OR do you eat the whole cracker (at least the pepperoni section) in one bite?? Probably not.

Good question! This is so detailed it’s cracking me up, but I always pinch the pepperoni to the cracker on the far side while I take a bite out of the near side. π Works for me–I’ve never had one fall apart. Yum.
the best solution I have found is to use Ritz crackers since I can easily put the entire cracker in my mouth at once. Not everybody has as large a mouth as mine though. π π I tend to eat this snack mostly when I am alone. π
Could we please have a video tutorial for this? I’m not sure that I’m quite getting the technique here…. =D
Never had that one, but my husband introduced me to this bedtime snack: saltines spread with butter and honey. Wash it down with milk.

Not bad…but I can definitely tell being pregnant would add the missing ingredient to the enjoyment. π It’s similar in grain/dairy/salty layers to something I ate every afternoon last summer: toast with cream cheese and capers. Hormones are amazing things, eh?
