Iced coffee

Well, it’s been a quiet week in Lake Wobegon.

We realized with a small shock we’re two-thirds of the way through summer vacation. How did that happen? Oh well. Pour out another round of iced coffee; we’ll need the boost before this is all over…

Iced Coffee

2 cups water
1 cup sugar
1/4 to 1/2 cup instant coffee
Splash of vanilla

Bring water to a boil. Remove from heat and stir in remaining ingredients until dissolved.

Pour several tablespoons over ice, and fill glass to brim with cold milk. Refrigerate remaining syrup until needed.

There are certainly fancier versions. I like the simplicity of this one.

The recipe is from my sister-in-law Renita, who says it’s public domain for the young housewives in her community. My little secret is to make half the sugar white and half brown, for an almost-caramel twist the whole family will enjoy

Iced coffee is mine, though I just make mine with leftover coffee from the morning, some almond milk, a dash of vanilla, and a little raw sugar in my glass!

Also, love love love cold mint tea. And kombucha, white peach kombucha to be exact.

I LOVE summer drinks.

SWEET TEA!
Southern style. In other words, truly loaded with that white stuff.
I’ve even started taking it on my forays to town to help combat my motherhood sleep-deprived airheadedness.
But I’d take iced coffee any day too!

My goodness, don’t feel guilty for liking sweet tea. I mean, who DOESN’T like sweet tea? 🙂

I have a saying that I wrote a while back– I always meditate on it while I drink my iced coffee… 🙂

Has anybody tried cold-brewing coffee for this?

Yes, I mostly cold-brew iced coffee. I put 6-8 oz. ground coffee into 1 gal. cold water. I let it set for 24 hrs, then strain.
It keeps in the fridge for maybe 2 weeks, unless you have 6 children wanting their share, like we do! Then I pour less than half a glass of the coffee, add ice, milk and stevia. Sometimes I add some chocolate syrup that my daughter makes, or vanilla flavoring. Yum! We enjoy this, occasionally, year round.
We love smoothies also.
I put 1-2 c. homemade yogurt in the blender, then add a banana, and whatever fruit that might be around, fresh or frozen, 6-8 ice cubes, stevia, vanilla flavoring, or whatever strikes. You can make a great chocolate peanut butter smoothie with yogurt, ice, peanut butter and cocoa… These are always welcomed on hot days! Or any day!

You just use 6-8 oz of ground coffee? How does this come out in cup measurements? We use three cups of grounds in a gallon jar. Maybe we are using too many and could save a bit on the coffee. 🙂

I measured 6 oz. and it was about 2 1/2 c. It seems pretty strong to me, because I get jittery! But then I try not to drink coffee too often, trying to be mindful of my adrenal glands…!

Iced Coffee is a staple here too. We use the cold-brew method, which isn’t fancy, but takes a bit longer. At least, the waiting-to-enjoy-it time is longer. 🙂 Travis wouldn’t drink iced coffee until I used the cold brew method. Now he makes sure the concentrate is on hand. 🙂

Mint Iced Tea is another favorite here as well.

Vietnamese iced coffee is our indulgent summer drink, perfect for Sunday afternoons.

We don’t have any of the cool little brewers my brother brought back from Vietnam, so pull two shots of espresso and add nearly the same amount of sweetened condensed milk. Chill briefly and add ice. The stuff is mutually strong and sweet; a short drink, but powerful.

I’m roaring over here and planning to show up at your house for ice coffee one of these simmering hot days.

So the brown sugar is your secret trick…..no wonder your ice coffee is always so good.

Fun post! Now I’m thirsty for iced coffee.

My favorite summertime drink is sweet tea and favorite healthy summertime drink is water with mint and lemon.
